5 More Healthy Diet Soups

Healthy diet peas and beans may help to keep body organs sound.

Kidney Bean Soup

Preparation time: 00: 10 Cooking time: 00: 40

Ingredients

2 cups kidney beans

2 quarts water

1 cup stewed tomato (or canned)

2 Tbsp soy sauce (low sodium)

1 pack flavored soup mix (with noodles)

2 Tbsp olive oil

2 cloves garlic (crushed)

3 Tsp fresh parsley

3 medium carrots 

2 stalks celery 

1/2 cup cabbage 

2 irish potatoes 

Pinch of salt

Preparation

Wash beans and soak overnight

Drain beans 

Cook beans in a large soup pot until tender

Wash and chop potatoes

Add potatoes to pot and cook until tender

Wash and chop other vegetables

Put oil in a frying pan

Saute chopped celery, cabbage, carrots, garlic and tomatoes 

Combine with beans and potatoes in soup pot

Add soy sauce and flavored soup mix

Stir and simmer for 10 - 15 minutes

Add chopped parsley 2 minutes before removing heat

(You may add more water if a thinner soup is desired) 

Serve hot and rev up those taste buds with another healthy diet meal.


Broad Bean Soup

Preparation time: 00: 10 Cooking time: 00: 35

Ingredients

2 cups broad beans (dried, green or canned)

1/2 pound chicken breast

8 cups water

1/2 pound pumpkin

1 irish potato

1 turnip

2 sprigs of thyme

2 stalks green onion (scallion)

1 clove garlic

1 pack flavored soup mix

Pinch of salt

Pepper to taste (optional)

Preparation

Wash chicken and cut in 1 inch chunks

Put water in a soup pot and bring to a boil

Add chicken and beans and boil until tender

(If dried beans are used, soak overnight)

(If canned beans are used, add them with the vegetables)

Wash and dice vegetables

Add diced potato and boil for 5 minutes

Add vegetables and flavored soup mix

Simmer over low heat for 15 minutes

Taste for flavor and adjust (Add boiling water and salt if needed)

Serve hot and enjoy another healthy diet bowl of soup.


Split Peas Soup

Preparation time: 00: 10 Cooking time: 00: 35

Ingredients

1 cup split peas

6 cups water

2 stalks celery (chopped)

1 medium onion (chopped)

2 stalks green onion (scallion)

3 sprigs thyme

1 cup coconut milk

1 bay leaf

Pinch of salt

Preparation

Wash peas and vegetables

Put water and peas in soup pot and boil until tender

(Peas may be soaked overnight, or about 2 hours before boiling)

Remove pot from heat

Push peas through a sieve 

Add milk, bay leaf, chopped celery, thyme, onion and scallion

Test and adjust to desired consistency (Add more milk or water if needed)

Taste for flavor and adjust(Add salt and other seasoning if desired)

Serve hot and rev up those taste buds.


Creamy Potato Soup

Preparation time: 00: 10 Cooking time: 00: 20

Ingredients

2 cups potato (mashed)

2 cups coconut milk (or almond milk)

1 medium onion (chopped)

2 Tbsp olive oil

Preparation

Heat milk

Rub mashed potato through sieve 

Pour milk slowly on to mashed potato and stir throughly

(Add more milk for desired consistency)

Saute onion in oil

Add onion to soup

Serve hot and soothe the stomach with this healthy diet soup


Peanut Almond Milk Soup

Preparation time: 00: 10 Cooking time: 00: 40

Ingredients

2 cups peanut (grounded)

2 cups water (or vegetable stock)

1 medium onion

1 cup almond milk (or coconut milk)

1 Tbsp soy sauce

1 Tbsp olive oil

Pinch of salt

Preparation

Saute onion in oil

Add soy sauce and water (or stock)

Add grounded nuts and stir

Simmer for 15 - 20 minutes

Skim and discard oil from top of soup

Run soup through a sieve

Add milk, stir and heat on low (Do not boil)

Add salt and taste for flavor and desired consistency (adjust if needed)

Serve with crackers and enjoy this lip smacking treat.
