Herb Butterfly Chicken

4 boneless chicken breasts
1/2 cup of low fat Ricotta Cheese
fresh tomatoes (home grown is best)
Parmesan Cheese
sprigs of common basil, oregano, garlic chives
Take the chicken breast and pound out with a cooking mallet. Put a little extra virgin olive oil in a baking pan. Place the chicken in the pan.
Divide the 1/2 cup of Ricotta by spreading it over the 4 breasts.
Slice or dice tomatoes and sprinkle over the Ricotta
Cut finely basil, oregano, and garlic chives. Sprinkle over the tomatoes.
Top each breast with Parmesan cheese.
Bake covered for 30 minutes at 350 degrees. Uncover, and bake 10 minutes more, or until you see the chicken golden up. (Ovens vary in time, so you may have to adjust to your own oven).
