Potato Pumpkin Leek Stew

Preparation time: 00: 15             Cooking time: 00: 20

This low sodium recipe has excellent ingredients for the healthy function of the kidneys.  

Ingredients (2 servings)

1/2 cup leeks

2 medium irish potatoes 

5 oz. pumpkin or squash

2 cups water

2 cloves garlic

2 Tbsp olive oil

Pinch of salt


Preparation

Wash, peel and dice potatoes

Wash and dice pumpkin

Pour water in a pot and bring to a boil

Add diced potato, pumpkin and pinch of salt

Boil until tender (Do not over cook)

Wash and chop leeks

Wash and crush garlic

Heat oil in a frying pan and sauté leeks and garlic for 2 - 3 minutes

Arrange potato and pumpkin and in a dish 

Pour sautéed leeks and garlic on top

Serve hot and enhance the function of the kidneys with this healthy diet dish.

Curry Eggplant Sauté

Ingredients (2 servings)

1 medium eggplant

1 small onion

1 large clove garlic

1 Tsp chopped parsley

1 Tbsp lemon juice

2 Tbsp olive oil

1 Tsp curry (or turmeric)

Pinch of salt

Preparation

Wash and cut eggplant in thin slices

Arrange slices on a dish and sprinkle pinch of salt on top

Pour lemon juice over eggplant slices

Wash and peel onion and garlic

Crush and chop garlic 

Chop onion

Mix curry (or turmeric with 1 - 2 Tbsp water)

Heat oil in a frying pan and sauté onion and garlic for 1 minute

Add eggplant and sauté for 2 minutes

Pour curry (or turmeric) on eggplant and sauté for 2 minutes

Serve and enjoy the richness of this healthy diet dish.

Steam green beans in a small amount of water (Do not overcook)

Bring 2 cups water to boil

Creamy Leek Soup (Healthy Diet for the Kidneys)

Preparation time: 00: 10             Cooking time: 00: 20

This ingredients in this dish have diuretic effects for the kidneys.  Leeks are cleansing and may help with the elimination of wastes circulating in the blood.

Ingredients (2 servings)

1/2 pound irish potato

8 oz plain or vanilla yogurt

1/2 pound leek

1 celery stalk

1/2 medium onion (or 1 small)

1 1/2 cups low sodium vegetable broth (or unsalted)

2 Tbsp lemon juice

2 Tbsp olive oil

1/2 Tsp chopped parsley

Pinch of salt

Preparation

Wash, peel and chop potatoes

Wash and chop celery and leeks

Heat oil in a pot 

Add onion, leeks and celery

Sauté until tender

Add chopped potatoes and simmer for 3 minutes

Add vegetable broth and simmer for 10 minutes

Set aside to cool

Pour in a blender

Add yogurt, lemon juice and pinch of salt

Blend until smooth 

Pour in a bowl and decorate with parsley

Wash and chop cauliflower and pepper

Crush tomato with a fork
